Clafoutis (Fruit Custard)
Clafoutis is a traditional French dessert made with a batter similar to flan. It is usually filled with black cherries, but sometimes with other fruits—such as apples, plums, berries, or pears—or even with chocolate and hazelnuts. Clafoutis is dusted with powdered sugar and served warm.

Ingredients
- 1¼ cups (300 ml) milk
- 3 eggs
- 1 Tbsp (15 ml) vanilla extract
- ⅛ tsp (0.625 ml) salt
- 1 cup (55 g) all-purpose flour
- 2/3 cup (130 g) sugar, divided
- 3 cups (675 g) sweet cherries, pitted
- Powdered sugar, as needed for garnish
Directions
- Preheat oven to 350° F (180° C).
- Place milk, eggs, vanilla extract, salt, flour, and half of the sugar in a blender and mix well.
- Grease an eight-cup (1.9-L) baking dish.
- Pour a ¼-inch (6.35-mm) layer of batter over the bottom of the dish. Reserve remaining batter for later.
- Bake until the top of the batter is firm but not baked through, about 8–10 minutes.
- Distribute cherries evenly over the baked batter.
- Sprinkle cherries with the remaining sugar.
- Pour remaining batter over the cherries.
- Bake until a toothpick inserted in the center comes out clean, about 45–60 minutes.
- Sprinkle clafoutis with powdered sugar and serve warm.
