Carottes Râpées (Carrot Salad)

The hugely popular French dish carottes râpées is a deceptively simple carrot salad packed with huge flavors. From fine dining to a healthy on-the-go snack, this recipe is versatile and tantalizingly flavorful. Typically served with a bright green touch of chives or a sprig of parsley, carottes râpées is defined by snappy fine strips of orange carrot. Dressed with a glistening, herbaceous and tart vinaigrette, carottes râpées is a favorite French side dish.

Ingredients

  • 2 lbs (900 g) medium carrots, julienned 
  • 2 pinches of Kosher salt, divided
  • 1½ tsp (7.5 ml) grated lemon rind
  • 2 Tbsp (30 ml) fresh lemon juice
  • 1 tsp (5 ml) Dijon mustard
  • Dash of ground red pepper
  • 2 garlic cloves, grated
  • ¼ cup (60 ml) extra-virgin olive oil
  • ¼ tsp (1.25 ml) freshly ground black pepper
  • 2 Tbsp (6 g) thinly sliced chives

Directions

  1. Place carrots in a large bowl, season them with a pinch of Kosher salt, and set aside in the refrigerator.
  2. Whisk together grated lemon rind, fresh lemon juice, Dijon mustard, red pepper, garlic, and olive oil in a large bowl to create the dressing.
  3. Season dressing with black pepper and another pinch of Kosher salt.
  4. Pour half of the dressing over carrots and refrigerate for 60 minutes.
  5. Pour remaining dressing over the salad and sprinkle it with chives.
  6. Serve chilled.
