Carottes Râpées (Carrot Salad)
The hugely popular French dish carottes râpées is a deceptively simple carrot salad packed with huge flavors. From fine dining to a healthy on-the-go snack, this recipe is versatile and tantalizingly flavorful. Typically served with a bright green touch of chives or a sprig of parsley, carottes râpées is defined by snappy fine strips of orange carrot. Dressed with a glistening, herbaceous and tart vinaigrette, carottes râpées is a favorite French side dish.

Ingredients
- 2 lbs (900 g) medium carrots, julienned
- 2 pinches of kosher salt, divided
- 1½ tsp (7.5 ml) grated lemon rind
- 2 Tbsp (30 ml) fresh lemon juice
- 1 tsp (5 ml) Dijon mustard
- Dash of ground red pepper
- 2 garlic cloves, grated
- ¼ cup (60 ml) extra-virgin olive oil
- ¼ tsp (1.25 ml) freshly ground black pepper
- 2 Tbsp (6 g) thinly sliced chives
Directions
- Place carrots in a large bowl, season them with a pinch of Kosher salt, and set aside in the refrigerator.
- Whisk together grated lemon rind, fresh lemon juice, Dijon mustard, red pepper, garlic, and olive oil in a large bowl to create the dressing.
- Season dressing with black pepper and another pinch of Kosher salt.
- Pour half of the dressing over carrots and refrigerate for 60 minutes.
- Pour remaining dressing over the salad and sprinkle it with chives.
- Serve chilled.
