Galette des Rois (Cake of Kings)

Galette des rois, or “cake of kings,” honors the three wise men who visited Baby Jesus on Epiphany, January 6. Another beloved holiday tradition, this French pastry, which consists of two layers of puff pastry and a marzipan-flavored filling, includes a trinket or fève (bean) baked into the cake. Guests know to cautiously nibble their slices; the person who finds the fève is crowned king for the day.

Ingredients

  • 1 lb (450 g) frozen puff pastry
  • 1½ cups (360 g) marzipan
  • 2 Tbsp (30 g) butter
  • 2 Tbsp (25 g) sugar
  • 2 Tbsp (15 g) all-purpose flour
  • 2 eggs
  • 1 tsp (5 ml) rum
  • 1 tsp (5 ml) vanilla extract
  • Water, as need to brush pastry
  • 1 trinket or fava bean
  • 1 egg yolk
  • 1 tsp (5 ml) water
  • 1 Tbsp (7 g) powdered sugar

Directions

  1. Thaw puff pastry according to package instructions, preheat oven to 425°F (220°C), and prepare a baking sheet by greasing and flouring it.
  2. Roll pastry out into two 10-inch (25-cm) rounds.
  3. Place marzipan, butter, sugar, flour, eggs, rum, and vanilla extract in a bowl and beat until a smooth paste forms.
  4. Spread paste on one pastry round evenly into a flat mound, leaving a wide border around the edge.
  5. Brush edge with water to facilitate sealing.
  6. Place second pastry round over paste, pressing rounds together to seal.
  7. Score a design of lines radiating from the center to the edge with a few slits for steam to escape using a sharp knife.
  8. Whisk together egg yolk and water to create an egg wash and brush top of pastry with it.
  9. Bake for 10 minutes.
  10. Reduce temperature to 350°F (180°C) without opening oven door and bake for 20 minutes.
  11. Remove from oven, dust with powdered sugar, and let cool.
