Madeleines
Madeleines are iconic French sponge cakes, instantly recognizable by their delicate shell-like shape. Originating in the Lorraine region of France, these small, buttery cakes have become a symbol of French patisserie, famously described in Marcel Proust's novel In Search of Lost Time. Madeleines are often enjoyed as a light dessert or snack, served with tea or coffee. Their slightly crisp edges and soft, spongy centers make them a delightful treat for any occasion.

- In a mixing bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, beat the eggs and sugar with a whisk or hand mixer until pale and thick, about 3–4 minutes. Stir in the vanilla extract and lemon zest.
- Gently fold the dry ingredients into the egg mixture in two additions, being careful not to deflate the batter. Gradually fold in the melted butter and milk until smooth. The batter should be thick and glossy.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour or up to overnight. Chilling the batter helps achieve the signature hump shape during baking.
- Preheat the oven to 375°F (190°C). Generously butter and flour the madeleine molds, or use a nonstick spray, ensuring all grooves are coated to prevent sticking.
- Spoon about 1 tablespoon (15 ml) of batter into each mold, filling it about ¾ full. Do not spread the batter; it will distribute evenly as it bakes.
- Bake in the preheated oven for 10–12 minutes, or until the edges are golden and the centers have risen to form the characteristic hump. Remove from the oven and let them cool in the pan for 2–3 minutes.
- Gently tap the pan to release the madeleines, and then transfer them to a wire rack to cool completely. Dust with powdered sugar before serving.
Notes
- Experiment with flavors by adding orange zest, almond extract, or a touch of honey to the batter.
- Madeleines are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
