Mousse au Chocolat (Chocolate Mousse)

Mousse au chocolat (chocolate mousse) is a thick, rich dessert made with dark, bittersweet chocolate. It sometimes includes orange, coffee, or other flavorings, but the traditional version is scented with vanilla and includes no cream. Some cooks garnish this decadent dessert with chocolate curls, mint, and/or whipped cream.

Ingredients

  • 1 vanilla bean
  • 6 eggs, separated
  • 7 oz (200 g) bittersweet chocolate, chopped
  • 1¾ oz (50 g) butter
  • 3 Tbsp (45 ml) sugar
  • Salt, to taste
  • Whipped cream, as needed for serving

Directions

  1. Split vanilla bean and scrape the seeds into the egg yolks.
  2. Melt chocolate and butter together in a double boiler.
  3. Remove from heat as soon as the chocolate is completely melted and beat in the egg yolks.
  4. Beat in sugar and transfer the mixture to a mixing bowl.
  5. Beat together egg whites and salt in a bowl until stiff but not dry.
  6. Fold egg whites gently into the chocolate mixture.
  7. Chill mixture thoroughly before serving.
  8. Garnish with whipped cream and serve cold.
