Purée de Poireau (Leek Puree)

Purée de poireau, or pureed leeks, commonly accompany French roasts and other meat entrées. Leeks are not only rich in flavor but also in fiber, antioxidants, and vitamins. With their mild, lightly sweet, onion-like flavor, leeks need few seasonings to turn them into a delicious side dish.

Ingredients

  • 4 medium leeks
  • 8 cups (2 l) water
  • 1½ tsp (7.5 g) sea salt, divided
  • ½ tsp (2.5 ml) ground black pepper
  • 2 Tbsp (30 g) salted butter
  • 1 Tbsp (15 ml) chopped chives

Directions

  1. Trim roots off leeks and cut into 1-inch (2.5-cm) pieces.
  2. Place leeks, water, and 1 teaspoon (5 ml) sea salt in a pot and bring to a boil.
  3. Reduce heat and simmer until tender, about 15–20 minutes.
  4. Process leeks in a blender or food processor.
  5. Return leek puree to the pot.
  6. Add remaining salt, black pepper, and butter, stirring and mashing.
  7. Serve immediately, garnished with chives.
