- Preheat a skillet over medium heat. Toss the bread cubes with olive oil, a pinch of salt, and black pepper. Toast in the skillet, stirring frequently, for 5–7 minutes or until golden brown and crisp. Remove from heat and set aside.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, Worcestershire sauce, garlic, and anchovies (if using) until emulsified. Season with salt and black pepper to taste.
- Bring a small pot of water to a gentle boil. Carefully lower the eggs into the water and cook for 6 minutes for soft-boiled eggs. Transfer to an ice bath, peel, and set aside.
- In a large salad bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and toasted croutons. Drizzle the vinaigrette over the salad and toss gently to coat.
- Divide the salad among individual plates. Slice the eggs in half and place them on top of each salad. Garnish with extra Parmesan and freshly cracked black pepper. Serve immediately.
