Salade César (French Caesar Salad)

Salade César, or French Caesar salad, is a refined version of the classic Caesar salad, featuring soft-boiled eggs, anchovies, and a tangy vinaigrette in place of the traditional creamy dressing. This dish brings a French twist to an iconic creation, blending the elegance of French culinary techniques with Italian American roots. While it retains elements such as crisp romaine lettuce and croutons, it incorporates Dijon mustard and anchovies to elevate its flavor profile.

Ingredients

Directions

    Making the Croutons:
  1. Preheat a skillet over medium heat. Toss the bread cubes with olive oil, a pinch of salt, and black pepper. Toast in the skillet, stirring frequently, for 5–7 minutes or until golden brown and crisp. Remove from heat and set aside.
  2. Making the Vinaigrette:
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, Worcestershire sauce, garlic, and anchovies (if using) until emulsified. Season with salt and black pepper to taste.
  4. Assembling the Salad:
  5. Bring a small pot of water to a gentle boil. Carefully lower the eggs into the water and cook for 6 minutes for soft-boiled eggs. Transfer to an ice bath, peel, and set aside.
  6. In a large salad bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and toasted croutons. Drizzle the vinaigrette over the salad and toss gently to coat.
  7. Divide the salad among individual plates. Slice the eggs in half and place them on top of each salad. Garnish with extra Parmesan and freshly cracked black pepper. Serve immediately.

Notes

  • Add grilled chicken, shrimp, or smoked salmon for a heartier main course option.
