Salade Niçoise

Salade Niçoise is a traditional dish that originated in the French city of Nice and has become a staple in bistros across France. It is traditionally made of tomatoes, hard-boiled eggs, Niçoise olives and anchovies or tuna, dressed with olive oil, or in some historical versions, a vinaigrette. Although many popular versions of this salad include potatoes, they are not part of the traditional composition.

Ingredients

  • 1 garlic clove, halved
  • 7 oz (210 g) tuna, baked, cooled, flaked
  • 2 tomatoes, sliced
  • ½ cucumber, sliced
  • ½ lb (225 g) green beans, blanched and drained
  • 1 bell pepper, deseeded and sliced
  • 1 onion, thinly sliced
  • 10 black niçoise olives
  • 2 hardboiled eggs, sliced
  • 8 anchovy fillets
  • 4 basil leaves, shredded
  • 3 Tbsp (45 ml) olive oil

Directions

  1. Rub a large serving bowl with garlic.
  2. Combine tuna, tomatoes, cucumber, green beans, bell pepper, onion, olives, and eggs in the prepared bowl.
  3. Sprinkle with anchovies, basil, and olive oil.
  4. Let the salad rest in the refrigerator until chilled.
  5. Toss salad at the table before serving.
