Salade Niçoise
Salade Niçoise is a traditional dish that originated in the French city of Nice and has become a staple in bistros across France. It is traditionally made of tomatoes, hard-boiled eggs, Niçoise olives and anchovies or tuna, dressed with olive oil, or in some historical versions, a vinaigrette. Although many popular versions of this salad include potatoes, they are not part of the traditional composition.

Ingredients
- 1 garlic clove, halved
- 7 oz (210 g) tuna, baked, cooled, flaked
- 2 tomatoes, sliced
- ½ cucumber, sliced
- ½ lb (225 g) green beans, blanched and drained
- 1 bell pepper, deseeded and sliced
- 1 onion, thinly sliced
- 10 black niçoise olives
- 2 hardboiled eggs, sliced
- 8 anchovy fillets
- 4 basil leaves, shredded
- 3 Tbsp (45 ml) olive oil
Directions
- Rub a large serving bowl with garlic.
- Combine tuna, tomatoes, cucumber, green beans, bell pepper, onion, olives, and eggs in the prepared bowl.
- Sprinkle with anchovies, basil, and olive oil.
- Let the salad rest in the refrigerator until chilled.
- Toss salad at the table before serving.
